

A healthy pesto recipe can be a jam packed nutrient dense side, sauce, dip or base to a meal! We love making pesto because it’s quick, easy and loaded with healthy fats, vitamins, and minerals. Trust us when we say the taste is a million times better when you make it at home versus buying it at the store!
*Some fun facts about Basil: It is an anti-inflammatory, fights free radical damage, combats stress, and has antimicrobial and antibiotic properties! Eat up!
INGREDIENTS:
2 Cups fresh basil leaves
1 Cup Spinach
1/3 Cup raw pine nuts, almonds, or walnuts
1/4 Cup grated Parmesan cheese OR nutritional yeast (our preference)
2 cloves of garlic, minced
1/2 Cup extra-virgin olive oil
1 Tbsp lemon juice
1/2 tsp Himalayan sea salt
DIRECTIONS:
- Combine all ingredients into a food processor.
- Taste the final product and make some adjustments if needed (sometimes it may need more lemon, garlic or basil).
- Enjoy!
