

This recipe started in a really funny way. I was often making lactation cookies after Rocky was born and Matt kept eating them. I told him to stop eating my cookies! I decided to look up the benefits of some of the key ingredients and IF they were healthy for EVERYONE (not just lactating mothers) then I would let him continue to eat them. I was actually blown away at the benefits of one particular ingredient, Brewers Yeast. Brewers Yeast is amazing for improving energy levels, balancing blood sugar, aiding in digestion and overall vitality. I continued making this recipe for months and eventually started adding on more healthy ingredients to make them what they are now, “Power Balls.” I love making these because they are not only DELICIOUS but so healthy for Rocky to eat. He is obsessed with these and asks for them OFTEN!
Ingredients: All Organic
3 C Sprouted Oats
2 1/2 TBSP Grassfed Collagen
3 TBSP Brewers Yeast
3 Eggs
1/2 C Hemp Hearts
1 C Flax Meal
2 1/2 TBSP Cacao Powder
1 TBSP Vanilla Extract
1/4 C Grassfed Butter (melted)
1/4-1/2 C Coconut Oil (melted)
2 TBSP Maple Syrup
1/2 C Coconut Sugar
1/2 tsp Sea Salt
*Optional: 1 banana (mashed) and/or 1 C dark chocolate chips
Instructions:
Preheat oven to 350º. Add all ingredients together in a large mixing bowl and roll the mixture into 1-2 inch balls. Bake for about 6-8 minutes (depending on how soft you like them). Enjoy!
